How I Make Authentic Carolina Vinegar BBQ Sauce (Eastern North Carolina Style)

When most people think of barbecue sauce, they picture something thick, sweet, and sticky.

That's not what we're making today.

A true Carolina vinegar BBQ sauce is thin, tangy, peppery, and made to complement smoked pork—not cover it up.

The first time Bubba and I tried authentic Carolina-style barbecue, it completely changed how we looked at pork. Instead of drowning the meat in sugary sauce, the vinegar brightened every bite and let the smoke and pork shine through.

Now, whenever we smoke pork butt, pulled pork, or chopped pork, there's almost always a bottle of this sauce sitting on the table.

  • 2 teaspoons crushed red pepper flakes

  • 1 teaspoon paprika

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • ½ teaspoon celery seed

  • 1 tablespoon Worcestershire sauce

  • 2 tablespoons melted unsalted butter (optional for a slightly richer finish)

How to Make Carolina Vinegar BBQ Sauce

Making this sauce couldn't be much easier.

Step 1

Pour the apple cider vinegar into a medium saucepan.

Step 2

Add all of the dry ingredients.

Whisk until everything is dissolved.

Step 3

Add the Worcestershire sauce.

If you're using butter, add it now.

Step 4

Heat over medium heat until the sauce just begins to steam.

Do not boil it.

You're only trying to dissolve the spices and marry the flavors together.

About 5–8 minutes is plenty.

Step 5

Remove from the heat.

Let it cool completely.

Pour it into a glass bottle or mason jar.

The Secret Most People Miss

Here's one thing I've learned over the years.

This sauce tastes good the day you make it.

It tastes great the next day.

The vinegar mellows overnight while all the spices come together.

Whenever possible, I make this sauce the day before I'm smoking meat.

What Meat Does It Go With?

This sauce was made for pork.

Store in a sealed glass container in the refrigerator.

Because it's vinegar-based, it'll keep for 3 to 4 weeks.
